Lamb Steaks with Shallot Marinade

Ingredients
- 4 lamb steaks (about 200 g each)
- 4 shallots
- 3 Garlic cloves
- 2 sprigs Rosemary
- 2 sprigs parsley
- 500 ml dry red wine
- 4 tbsp olive oil
- 1 tsp harissa powder
- Pepper (freshly ground)
- Sea salt

Wash the steaks, pat them dry and place them in a shallow dish. Peel the shallots and garlic. Slice both into thin strips. Rinse the rosemary and parsley, shake off excess water, pluck or tear leaves and finely chop both herbs. Mix the shallots, garlic and herbs with the wine. Add the oil, harissa and pepper, stir well and pour the marinade over the meat. Cover and refrigerate for at least 2 hours, preferably overnight.

Before grilling, let the steaks drain. Grill on a hot grill for 2-3 minutes per side over direct heat. Then move them to the grill edge for about 5 minutes to finish cooking to pinkness. Sprinkle with sea salt before serving.
