Ham and Rice Cannelloni

Ingredients

  • 2 small zucchini
  • 2 tbsp butter
  • 200 g basmati rice
  • 200 ml passata (canned)
  • Salt
  • pepper (ground)
  • 200 ml chicken broth
  • 8 slices cooked ham
  • 60 g grated cheese (to taste)

Instructions

    Wash, peel and dice the zucchini. Heat the butter in a pot, sauté the zucchini and rice while stirring. Stir in the passata and season with salt and pepper. Add the chicken broth, cover and simmer over low heat for about 15 minutes. Let stand off the stove for another 5 minutes.

    Preheat the oven to 180°C fan.

    Lay the cooked ham on a work surface, spread the rice over it and roll into ham‑cannelloni. Arrange side by side in a baking dish, sprinkle with cheese and bake in the preheated oven for about 15 minutes until gratinated.
