Ingredients
- 200 g Long grain rice
- Salt
- 2 carrots
- 1 kohlrabi
- 4 Spring Onions
- 150 g fresh green beans
- 500 g chicken breast fillet
- 30 g Butter
- 2 tbsp flour
- 500 ml chicken broth
- 150 ml heavy cream (at least 30% fat)
- pepper (ground)
- 1 tbsp Lemon Juice

Bring the rice to a boil with water in a 1:2 ratio and a pinch of salt, cook for 20-25 minutes. Peel the carrots and kohlrabi and cut into thin 4 cm long strips. Wash the spring onions, shake dry and slice the onion; set aside the leek for garnish. Wash the beans, trim ends and cut into 2 cm pieces. Wash the chicken breast fillets, pat dry and cut into 1.5 cm cubes.

In a pot melt the butter and brown the chicken for 5-6 minutes until golden yellow. Add the vegetables, sauté briefly, dust with flour and deglaze with broth. Simmer for 10-15 minutes over medium heat until the sauce thickens, then add the cream. Bring to a quick boil and season with salt, pepper and lemon juice. Plate the cooked rice with the frikassee, sprinkle with pepper and garnish with leek strips.
