Halloween Cookies

Ingredients
- 250 g honey
- 125 g sugar
- 125 g butter
- 0.5 packet gingerbread spice
- 500 g flour
- 1 packet baking powder
- 1 tbsp cocoa powder
- 1 egg
- flour (for rolling)
- sugar lettering
- 200 g powdered sugar
- 1 tbsp Lemon Juice
- food coloring

Preheat the oven to 175°C.

Heat the honey, sugar, butter and gingerbread spice in a pot over low heat while stirring (do not boil). Stir until the sugar has dissolved, then let cool.

Mix the flour, baking powder and cocoa. Put half of this mixture into a bowl. Add the egg and the honey mixture. Mix everything with a dough hook until smooth. Fold in the remaining flour mixture by hand. Shape into a ball and wrap in cling film. Chill for at least 1 hour before further processing. Roll out to about 5 mm thickness on a lightly floured surface.

Cut out shapes of witches, cats, owls and leaves, optionally using homemade stencils. Place the cookies on a baking sheet lined with parchment paper and bake for 15 minutes until golden brown. Cool well on a wire rack. Mix powdered sugar and lemon juice into a glaze, color it black, and decorate the Halloween cookies as desired. Finish with sugar lettering and let the glaze set.
