Halibut Fillets with Orange and Vegetables

Ingredients
- 4 halibut fillets (150 g each)
- 1 tbsp Lemon Juice
- 1 untreated orange
- 2 carrots
- 1 stalk leek
- 1 Zucchini
- Salt
- 4 bay leaves
- 100 g fresh bean pods
- 1 tbsp butter
- 125 g peas (frozen)
- white pepper
- 100 ml dry white wine

Drizzle the fish with lemon juice. Wash the orange hot, dry it and slice into rounds. Preheat the oven to 200 °C (convection). Peel the carrots and cut them into 4 cm long, 5 mm thick strips. Rinse, trim, and slice the leek into rings. Wash the zucchini, trim ends, and cut into 4 cm long, 5‑10 mm thick strips.

Pat the fish dry, season with salt, top each fillet with 1–2 orange slices and bay leaves, and tie loosely with kitchen twine. Sauté the bean pods in butter, add carrots to soften, then mix in leek, zucchini, and peas; season with salt, pepper, pour in wine, and transfer everything into a baking dish. Place the fish parcels on top, bake in the preheated oven (middle rack) for 10–15 minutes depending on thickness.
