Chicken Breast with Almonds

Ingredients
- 4 chicken breast fillets
- 150 g yogurt
- 1 garlic clove (finely chopped)
- juice of one lemon
- 1 untreated lemon
- 0.5 bunch thyme
- 6 tbsp Olive oil
- 50 g almond kernels (shaved)
- 1 cucumber
- 1 Shallot
- 3 tbsp white wine vinegar
- Salt
- Pepper (from the grinder)

Wash chicken, pat dry.

Whisk yogurt with garlic and lemon juice, season with salt and pepper. Coat breasts and marinate for 30 minutes.

Slice lemon thinly and line the bottom of a baking dish with slices. Sprinkle thyme on top and place chicken. Bake in preheated oven at 180°C (fan) for about 25 minutes. Flip after 10 minutes and sprinkle almonds.

Meanwhile wash cucumber and shave into thin ribbons. Peel shallot and slice into rings. Toss both with vinegar and oil, season with salt and pepper. Serve diagonally sliced chicken breast with the salad.
