Ingredients

  • 2 Zucchini
  • 1 onion
  • 1 Garlic clove
  • 2 tbsp olive oil
  • 3 slices toast bread
  • 150 g black olives (pitted)
  • 1 tbsp capers
  • 800 g mixed ground meat
  • 2 Eggs
  • 2 tbsp freshly chopped thyme
  • Salt
  • pepper (ground)
  • 150 g feta cheese
  • 150 g cocktail tomatoes

Instructions

    Wash, peel, and dice the zucchini. Peel and finely dice the onion and garlic. Sauté all together in hot oil for 2–3 minutes, then remove from heat and let cool.

    Soak the toast slices in lukewarm water.

    Set aside 2–3 tbsp of olives for topping; roughly chop the remaining olives with the capers. In a bowl combine the ground meat, drained and crumbled toast, eggs, thyme, and the chopped vegetables (leaving 2–3 tbsp). Mix well and season with salt and pepper.

    Preheat the oven to 180 °C (350 °F) with both top and bottom heating.

    Transfer the meat mixture into a baking dish lined with parchment paper and smooth the surface. Sprinkle with the reserved olives, remaining vegetables, and crumbled feta. Arrange sliced tomatoes on top. Season with salt and pepper, then bake for about an hour. If the casserole darkens, cover it with parchment paper.
