Ingredients

  • 500 g mixed ground meat
  • 1 onion
  • 1 Garlic clove
  • 3 parsley
  • 1 stale bread roll
  • 2 Eggs
  • 20 g butter
  • 1 tbsp Vegetable oil
  • salt (pepper)
  • 4 tbsp Vegetable oil
  • 1 long eggplant
  • 6 tbsp Olive oil
  • 150 g firm sheep cheese
  • 10 black olives
  • 0.5 head lettuce

Instructions

    Soak the bread roll in lukewarm water. Peel and finely chop the onion and garlic. Mix with the meat, eggs, parsley, drained bread, salt, and pepper. Shape into patties and brown them in hot butter with oil on all sides. Wash the eggplant, trim ends, slice lengthwise into thin strips. Salt the slices, let sit 10 minutes to draw out water, rinse cold, pat dry, and fry portions in hot oil.

    Cube the cheese, tear lettuce into bite‑sized pieces, and lay a plate with it. Wrap an eggplant slice around each patty, place a piece of cheese and a black olive in the center, secure with toothpicks, and arrange on the lettuce.
