- 300 g Ground Beef
- 200 g veal mince
- 2 Eggs
- 50 g breadcrumbs
- 1 bunch parsley
- 750 g potatoes
- 3 egg yolks
- 100 g flour
- 2 tbsp clarified butter
- Salt
- Pepper
Instructions

Mix ground beef, veal mince, eggs and breadcrumbs. Wash parsley, finely chop, mix with salt and pepper.

Beat egg yolks and flour together, season with salt and pepper. Shape the meat dough into a roll, wrap it around the potato dough, wrap in cling film and refrigerate for 1 hour.

Cut into finger‑thick slices, coat lightly with flour and fry in hot clarified butter until golden.
