Ground Meat Loaf with Barbecue Sauce

- 250 g ketchup
- 150 ml beef broth
- 3 tbsp strong coffee
- 3 cloves garlic
- 2 Tbsp beet syrup
- 1 tbsp soy sauce
- 1 tbsp sharp mustard
- 1 tbsp Lemon Juice
- 1 tsp paprika (sweet)
- 0.25 tsp cayenne pepper
- 0.25 tsp Ginger powder

- 800 g mixed ground meat
- 1 onion
- 20 g butter
- 1 day‑old roll
- 1 egg
- 2 tbsp Tomato paste
- 1 tsp Mustard
- Salt

- 700 g potatoes
- 2 tbsp butter
- 100 ml milk

- 2 tbsp chives sprigs
- 500 g mushrooms
- 2 tbsp butter

For the barbecue sauce, blend garlic with a pinch of salt into a paste.

Add all ingredients and the garlic paste to a pot; simmer uncovered for about 15 minutes until thickened. Let the sauce steep overnight.

Soak the roll in water. Peel and finely chop the onion; sauté in butter until translucent. In a bowl mix ground meat, onion, drained roll, egg, tomato paste, mustard, and spices; knead well and shape into a loaf. Place the loaf in a greased roasting pan and bake at 180 °C for 60 minutes. Brush with barbecue sauce ten minutes before finish and continue baking.

For the mashed potatoes, peel and boil potatoes in salted water for about 25 minutes. Drain and mash with butter, milk, salt, pepper, nutmeg, and chives using a potato masher; taste and adjust seasoning.

Clean mushrooms, remove stems, and quickly fry them in hot butter in portions, seasoning with salt and pepper.

Serve by slicing the loaf, plating with mashed potatoes and mushrooms, and offering remaining barbecue sauce on the side.
