Ingredients

  • 1 kg chicken
  • 2 onions
  • 4 Spring Onions
  • 2 Garlic cloves
  • 2 tbsp plant oil
  • 1 tbsp turmeric
  • 1 tsp chopped coriander root
  • 1 tsp freshly grated ginger
  • 0.5 tsp ground cumin
  • 250 ml poultry broth
  • 200 ml coconut milk
  • 200 g peas
  • 2 banana slices
  • 100 g coconut flakes
  • 75 g roasted peanuts
  • 75 g mango chutney

Instructions

    Cut the chicken into cubes, peel and dice the onions, spring onions, and garlic. Slice the onions into strips, finely chop the spring onions and garlic. Sauté all together with the chicken cubes in hot oil for 2-3 minutes.

    Add turmeric, coriander root, ginger, and cumin; deglaze with broth. Stir in coconut milk and simmer gently for about 30 minutes, stirring occasionally. Add more broth if needed.

    Finally add peas to the curry and cook for another 5 minutes. Season with salt and cayenne pepper, garnish with coriander, and serve with the remaining ingredients in small bowls.
