Ground Beef in Potato Crust

Ingredients
- 500 g ground beef
- 2 old-fashioned rolls
- 2 tbsp chopped shallots
- 50 g smoked ham (diced)
- 2 tbsp butter
- 1 tbsp fresh marjoram leaves (chopped)
- 1 tsp sharp mustard
- Salt
- pepper (ground)
- 600 g cold potatoes (cooked in skin)
- 50 g flour
- 30 g smoked ham (diced)
- 1 egg yolk
- Salt
- pepper (ground)
- nutmeg
- butter fat (for frying)
Instructions

Sauté shallots in a little butter until translucent, then knead with all other ingredients for the meat mixture and shape into two equal-length rolls about 2.5 cm in diameter.

Peel potatoes, press through a potato masher, and mix with flour, diced ham, and egg yolk to form one dough; season with salt, pepper, and nutmeg.

Roll potato dough on a floured surface into two rectangles about 7 cm wide and the length of the meat rolls; brush with egg white, place meat rolls on top, wrap with dough, and press edges firmly.

Heat butter fat in a casserole pot and brown rolls on all sides; bake in preheated oven at 200°C for about 20 minutes, brushing with fat occasionally.

Slice cooled rolls into 1 cm thick slices and arrange on a plate.
