Ground Beef and Corn Casserole with Bell Pepper

A ground beef and corn casserole with bell pepper makes a great dinner recipe. Often there is still some left over for meal prep.

Ingredients

  • 285 g corn (1 can)
  • 400 g ground beef
  • oil (for browning)
  • 2 onions
  • 2 Garlic cloves
  • 1 red bell pepper
  • 1 red chili pepper
  • 80 g black olives (pitted)
  • 0.5 tsp ground cumin
  • 0.5 tsp ground coriander
  • 3 tbsp tomato paste
  • 400 g pizza tomatoes (1 can)
  • 400 g canned chili beans (1 can)
  • Salt
  • 125 g mozzarella

Instructions

    Preheat the oven to 200°C and grease a casserole dish.

    Drain the corn.

  3. 3.

    Heat some oil in a large pan. Add the ground beef and brown it crumbling.

    Meanwhile, peel and finely dice the onions and garlic. Clean and cube the bell pepper. Slice the chili peppers lengthwise, remove seeds, and chop very finely. Cut the olives into rings.

    Add the onions and garlic to the meat and cook while stirring.

    Stir in the tomato paste, cumin, and coriander. Then add the bell pepper with chili, corn, pizza tomatoes, beans, and olives. Bring everything to a quick boil, season with salt, and transfer to the casserole dish. Bake in the oven for about 15 minutes.

    Meanwhile, drain the mozzarella, cube it, sprinkle over the casserole, and bake for another 10 minutes until the cheese is melted.
