Ingredients

  • 4 medium beetroot
  • 1 kg coarse sea salt
  • 4 egg whites

Instructions

    Preheat the oven to 180°C fan.

    Beat the egg whites until stiff, fold in two thirds of the sea salt. Sprinkle the remaining salt on a baking tray.

    Peel and halve the beetroot. From the salt‑egg mixture cut out eight equal pieces, flatten slightly and wrap each beetroot half around one piece, forming a ball. Place on the salted tray and bake for about 30 minutes. Serve the beetroot in the salt crust.
