Ingredients
- 4 zucchini
- 1 Garlic clove
- 4 tbsp olive oil
- Salt
- black pepper (freshly ground)
- 1 tsp dried thyme
- 1 untreated lemon
- ½ handful mint leaves
- 50 g parmesan shavings

Preheat the grill.

Wash and trim the zucchini, then slice lengthwise into thin strips. Peel and finely chop the garlic. Combine both in a bowl with olive oil, salt, pepper, garlic, and thyme; mix well. Transfer to an aluminum tray and grill for about 10 minutes, reserving the dressing.

Wash the lemon hot, dry it, grate the zest down to the white part, then squeeze out the juice. Adjust the dressing with lemon juice. Wash and pat the mint dry.

Remove the zucchini from the grill, arrange on a platter, drizzle with the vinaigrette, and sprinkle with lemon zest, mint, and parmesan before serving.
