Ingredients

  • 700 g blueberries
  • 2 tbsp honey
  • 300 ml blueberry juice
  • 1 lemon
  • 1 tbsp Cornstarch
  • 100 ml whipping cream

Instructions

    Wash the blueberries, discard any spoiled ones, set aside a few, and puree the rest with honey. Add the juice and bring to a boil in a pot. Simmer over medium heat for 10 minutes. Squeeze the lemon and whisk its juice with cornstarch. Use this mixture to thicken the chilled bowl.

    Fill the soup into plates and let it cool. Whip the cream halfway stiff and fold it into the soup. Serve garnished with the reserved blueberries.
