Ingredients

  • 50 g dried apricots
  • Cauliflower florets (100 g each)
  • Broccoli florets (100 g each)
  • Bell peppers (1 small red and 1 small green)
  • 1 small pineapple
  • 100 g small mushrooms
  • 3 onions
  • 3 Garlic cloves
  • 2 tsp salt
  • 4 tbsp melted butter
  • 1 tsp freshly ground pepper
  • 0.5 tsp turmeric
  • 2 tbsp cane sugar
  • 60 ml vinegar
  • 1 tbsp honey
  • 3 tbsp oil (for the tray)
  • 12 wooden skewers

Instructions

    Soak apricots in lukewarm water.

    Wash, deseed and roughly cube bell peppers; peel and cube pineapple. Clean mushrooms, peel and quarter onions.

    Press garlic through a press and mix with melted butter, salt, pepper, turmeric, sugar, vinegar, and honey to make the sauce. Add drained apricots and prepared vegetables to the sauce and marinate for about 1 hour.

    Alternate threading the ingredients onto skewers, place on oiled aluminum foil on the grill rack, and grill over medium heat for 10-12 minutes, turning occasionally.
