Grilled Tomatoes with Cheese Filling

The next grill party is coming up? Then enrich the grill buffet with grilled tomatoes stuffed with cheese from Spoonsparrow!

Ingredients

  • 1200 g tomatoes (8 large tomatoes, 150 g each)
  • 125 g mozzarella
  • 125 g goat fresh cheese
  • 2 sprigs Rosemary
  • 40 g freshly grated Parmesan
  • Salt
  • black pepper (freshly ground)
  • 0.5 tsp organic lemon zest
  • 1 tbsp olive oil (for drizzling)

Instructions

    Wash the tomatoes and cut off a lid from each. Hollow out the tomatoes. Drain the mozzarella, dice it small, and mix with the goat fresh cheese. Wash the rosemary, shake dry, and pluck the needles. Mix in the Parmesan and season with salt, pepper, and chili flakes. Fill the tomatoes with the cheese mixture.

    Place the tomatoes on the grill and optionally lay the lids beside them. Grill covered for about 10 minutes (longer or shorter depending on heat) until the tomatoes are slightly soft and the cheese has melted. Remove from the grill, place the lids back on top, drizzle with a little oil, and serve.
