Ingredients

  • 1 Avocado
  • 250 g cream cheese
  • 100 g Sour cream
  • Lemon juice
  • Salt
  • Pepper (freshly ground)
  • 500 g pumpkin flesh (e.g., Hokkaido)
  • vegetable oil (for frying)
  • 4 slices beef steak about 180 g each (e.g., ribeye)
  • 2 red chili peppers sliced into rings
  • 2 tbsp spring onion greens sliced into rings
  • 8 chicory leaves

Instructions

    Peel the avocado, halve it, remove the pit and mash the flesh with a fork. Stir in the cream cheese and sour cream, season with lemon juice, salt, and pepper. Transfer to a piping bag with a smooth tip.

    Slice the pumpkin into thin rounds, season with salt and pepper, and grill in a skillet with 1-2 tbsp oil on both sides for 6-8 minutes.

    Pat the steaks dry, season with salt and pepper, and grill them in a skillet with 1-2 tbsp oil for 4-8 minutes depending on thickness and desired doneness.

    Arrange the pumpkin slices on plates, scatter chili rings and spring onion greens over them. Place chicory leaves beside, pipe avocado cream decoratively on top, and serve.
