Grilled Shrimp Tails with Aioli

Ingredients

  • 5 large garlic cloves
  • 3 egg yolks
  • 1 tsp sharp mustard
  • 0.5 tsp turmeric
  • Salt
  • Pepper (freshly ground)
  • 300 ml olive oil
  • 0.5 tbsp lemon juice
  • 16 giant shrimp

Instructions

    Peel the garlic cloves and finely mince them. Add the egg yolks, mustard, turmeric, a pinch of salt and pepper.

    Whisk everything in a large bowl until it becomes white and creamy. Gradually pour in the olive oil in thin streams while continuously whisking, ensuring each addition is fully incorporated before adding more. Season with salt and lemon juice to taste.

    Wash the shrimp, split them lengthwise, remove the vein, and season with salt and pepper. Preheat a hot stone or grill and cook the shrimp on it, turning occasionally. Serve with aioli.
