Ingredients

  • 700 g scampi (headless)
  • 2 Garlic cloves
  • 4 tbsp olive oil
  • 1 lemon (juice)
  • 2 tbsp fresh chopped herbs (e.g., rosemary and thyme)
  • Sea salt
  • freshly ground pepper

Instructions

    Rinse the scampi, remove the gut, and place them in a bowl. Peel the garlic and press it through a press. Mix with olive oil, lemon juice, herbs, salt, and pepper. Add the mixture to the scampi, stir well, cover, and refrigerate for about 1 hour.

    Remove from the marinate and place on a hot grill. Grill, turning occasionally, for 7-9 minutes. Serve with aioli and fresh baguette.
