Grilled Sausage Snail with Polenta

Ingredients
- 4 sausage snails
- 1 lemon
- 4 tomatoes
- 1 Shallot
- 1 EL white wine vinegar
- 2 EL olive oil
- Salt
- Pepper (freshly ground)
- Basil
- 1 onion

- 150 g polenta (cornmeal)
- 50 g butter
Instructions

Peel and dice the onion for the polenta. Heat 2 EL olive oil in a pot, sauté the onions over medium heat, add 500 ml water, pour in the remaining oil, and stir in the cornmeal.

Bring the mixture to a boil while stirring, then simmer gently for about 20 minutes, stirring frequently. Finally fold in butter and season with salt and pepper.

Quarter the lemon and cut each quarter crosswise into halves. Skewer each sausage snail with two half-leaflets of lemon and grill on both sides for about 4 minutes per side.

Wash, quarter, seed, and cube the tomatoes. Peel and finely dice the shallot. Mix both with vinegar and oil, seasoning with salt and pepper.

Plate the polenta topped with grilled sausage snails and tomato salad, garnish with basil.
