Grilled Sardines with Asparagus

Ingredients
- 800 g green asparagus
- Salt
- 1 tsp sugar
- 3 tbsp Lemon juice
- 3 sprigs rosemary
- 3 tbsp olive oil
- 2 Garlic cloves
- 0.5 tsp paprika powder (sweet)
- Pepper
- 12 sardines (ready to cook)
- 40 g flour
- 4 lemon wedges

Wash the asparagus, peel the lower third if necessary and trim the tough ends. Bring a pot of water with 1 tsp salt, sugar and 2 tbsp lemon juice to a boil. Blanch the asparagus for about 3 minutes. Drain, rinse under cold water and let drain.

Rinse the rosemary and shake dry. Pick needles from one sprig and stir into the oil. Peel the garlic, halve it, add to the oil and whisk in paprika powder, salt and pepper.

Heat the grill. Rinse the sardines, pat dry and brush with a little of the seasoned oil. Coat in flour and grill for about 5 minutes on each side. Grill the asparagus (in a grilling tray if desired) for about 5 minutes, turning frequently, brushing occasionally with the seasoned oil and placing remaining rosemary on top.

Arrange the asparagus on plates, place three sardines on top of each and serve with a lemon slice.
