Ingredients

  • 300 g Penne
  • 8 large shrimp (prepped, peeled and deveined)
  • 600 g green asparagus
  • 2 cloves garlic
  • 2 tbsp olive oil
  • 1 lemon
  • Salt
  • Pepper
  • fresh parsley
  • 1 tsp sugar
  • 1 tbsp butter

Instructions

    Wash the asparagus, trim the woody ends, peel the lower third if necessary. Cut the stalks lengthwise into 5-6 cm pieces. Cook the pasta in plenty of salted water according to package instructions. In a pot bring lightly salted water with juice of half a lemon, one tablespoon butter and the asparagus to a boil; cook the asparagus for 6-8 minutes until al dente.

    Meanwhile peel and finely chop the garlic cloves, then sauté the shrimp in oil over medium heat, turning frequently. Wash and finely chop parsley, adding it to the shrimp. Thoroughly wash a lemon, grate some zest, squeeze its juice, and add it to the shrimp mixture.

    Drain the pasta and asparagus, combine with the shrimp. Season with salt and pepper, add more lemon juice if desired, and serve on plates. Garnish with parsley and serve warm or cold.
