Ingredients

  • 800 g wild salmon fillet (ready to cook, skin removed)
  • 1 tbsp Lemon Juice
  • Salt
  • Pepper (freshly ground)
  • 800 g small early potatoes
  • 2 bunches young spinach
  • 1 handful tender nettle leaves
  • 80 g Butter

Instructions

    Wash the wild salmon fillet, pat dry, cut into four equal pieces, drizzle with lemon juice, season with salt and pepper, and let sit for a few minutes. Thoroughly wash the potatoes, place them in a steamer basket, and steam for 15 minutes.

    Wash the spinach, rinse, trim, and shake off excess water. Wash the nettle leaves and dry by shaking.

    Grill the salmon for about 8 minutes. Melt butter in a small saucepan, add the nettles, season with salt and pepper. Drain the potatoes, arrange on plates, pour the butter mixture over them. Flake the fish slightly, place on the plates, and garnish with spinach. Serve hot.
