Glazed Salmon Fillet on Leek Vegetables

Ingredients
- 2 stalks leek
- 1.5 cm fresh ginger
- 1 clove garlic
- cooking oil
- 100 ml Vegetable broth
- light soy sauce
- rice vinegar
- pepper (ground)
- 600 g wild salmon fillet (ready to cook, with skin)
- 20 g palm sugar
- 3 tbsp dark soy sauce

Quarter the leeks lengthwise, rinse under running water, clean and shake dry. Peel and finely chop ginger and garlic; sauté in a hot pan with oil until translucent. Separate leek layers and add to the ginger mixture; briefly cook and deglaze with broth. Simmer over medium heat covered for about 3-4 minutes. Season with soy sauce, rice vinegar, and pepper.

Wash the salmon, pat dry, and cut into four equal pieces. Grate the sugar finely and mix with dark soy sauce.

Sear the salmon skin-side down in a hot pan with oil until golden brown; flip, reduce heat, and cook until translucent. Brush the skin side with the sugared mixture while cooking.

Arrange the leek vegetables on plates, place one salmon piece on top of each, and garnish with caramelized onions if desired. Serve immediately.
