A quick Mediterranean chicken stir‑fry is a simple Spoonsparrow recipe that always tastes great.
Ingredients
- 500 g chicken breast fillet
- Salt
- Pepper (freshly ground)
- 2 tbsp lemon juice
- 2 bell peppers (yellow and orange)
- 2 carrots
- 1 cucumber
- 1 Garlic clove
- 1 piece fresh ginger (about 1.5 cm)
- 1 onion
- 2 tbsp olive oil
- 1 Tbsp freshly chopped thyme
- Cayenne pepper
- 0.5 tsp Curry Powder

Wash, pat dry, cut the chicken breast into bite‑sized pieces, season with salt and pepper, and drizzle with a few spritzes of lemon juice. Wash the bell peppers, halve them, remove seeds and white membranes, then dice into bite‑sized cubes. Peel the carrots, trim ends, and shave into thin strips. Peel the cucumber, halve it, scoop out watery seeds with a teaspoon, and cut into ~2 cm pieces. Peel garlic and ginger, finely dice. Peel the onion, halve, and slice into strips.
