Grilled Poultry Sausage Skewers
Poultry sausage skewers: alternating poultry sausages with vegetable rolls on sticks – this saves fat calories while still allowing you to enjoy a tasty grill.
Ingredients
- 180 g poultry sausage (3 poultry sausages; 15% fat)
- 1 Garlic clove
- 150 g small zucchini (1 small zucchini)
- 150 g small eggplant (1 small eggplant)
- Salt
- 12 sage leaves
- black pepper (freshly ground)
Instructions

Cut each poultry sausage in half crosswise and skewer them lengthwise onto 6 sticks. Note: if using wooden skewers, soak them in water for about 15 minutes beforehand to prevent burning!

Peel the garlic clove and finely mince it. Wash, trim, and thinly slice the zucchini and eggplant lengthwise with a vegetable peeler.

Lay several sheets of kitchen paper on a cutting board. Place the vegetable slices on top, salt generously, and let them sit for 10 minutes.

Meanwhile wash the sage leaves, shake off excess water, and skewer two of them onto the top and bottom ends of each sausage stick.

Pat the vegetable slices dry and stack one zucchini and one eggplant slice together. Season with pepper and sprinkle with garlic.

Roll the stacked slices into tight little rolls and skewer one roll onto the lower and upper end of each sausage stick.

Arrange the skewers on aluminum trays or sturdy foil and grill over high heat for 12–15 minutes, turning several times.
