Ingredients
- 4 neck ribs (about 200 g each)
- Salt
- freshly ground pepper
- 2 tbsp oil
- 1 tbsp oil (for the grill rack)
- juice of three organic oranges
- 1 tsp grated orange zest
- 2 dried chili peppers (crushed in a mortar)
- 0.5 tsp Dried oregano
- 2 Garlic cloves

Mix orange juice and zest, chili, and oregano. Peel and press the garlic into the mixture. Brush about half of the ribs with the mixture and marinate for approximately 2 hours.

Pat the ribs dry, brush with a little oil, season with salt and pepper. Grill on a hot, lightly oiled rack over medium heat for about 8 minutes per side. Serve the remaining marinades separately.
