Ingredients

  • 750 g pre‑cooked beef fillet (center cut)
  • 5 tbsp olive oil
  • 2 sprigs Rosemary
  • 4 stems thyme
  • 500 g Green Asparagus
  • 2 Eggplants
  • 2 red bell peppers
  • 250 g celery root
  • Salt
  • black pepper (freshly ground)

    Preheat the grill.

    Rinse the beef fillet, pat dry and brush with olive oil. Drizzle a double layer of foil with oil and top it with the rinsed and patted herbs. Place the meat on the foil, wrap it, and put it on the grill. Cook covered for about 25 minutes, turning occasionally.

    Meanwhile peel the lower third of the asparagus. Wash, trim, and slice eggplants lengthwise. Wash, trim, and cut peppers into strips. Peel celery root and slice. Blanch the vegetables in salted water: first blanch asparagus with celery root for about 5 minutes, then add peppers and eggplant and cook for another 2–3 minutes until slightly firm. Shock in ice water and pat dry.

    Unwrap the meat, season with salt and pepper, and finish grilling on the grill while turning until pink (medium internal temperature ~55 °C). Season the vegetables with salt and pepper, drizzle with olive oil, place them on the grill, and grill alongside the meat for 6–8 minutes.

    Slice the beef and serve it with the grilled vegetables. Offer tomato salsa on the side as desired.
