Ingredients
- 2 stalks coriander leaves
- 600 g lamb meat (from the shank, ready to cook)
- 2 Garlic cloves
- 1 tsp harissa
- 4 tbsp olive oil
- 300 g Couscous
- 300 ml Vegetable broth

Rinse the coriander, shake dry and roughly chop the leaves. Wash the meat, pat dry and cut into bite‑size cubes. Peel the garlic, finely mince it, then mix with harissa, coriander and oil. Thread the meat cubes onto skewers, brush with the marinade and grill over high heat for 8–10 minutes, turning occasionally.

Meanwhile, place the couscous in a tajine, pour the hot vegetable broth over it and let it absorb for about 10 minutes. Fluff with a fork, arrange the skewers on top and serve.
