Grilled Lamb Chops with Pesto and Tomato Skewers

Ingredients

  • 50 g Pine nuts
  • 80 g parsley
  • 2 Garlic cloves
  • 120 ml olive oil
  • 2 tbsp freshly grated Pecorino
  • Salt
  • Pepper (freshly ground)
  • 1 splash Lemon juice
  • olive oil (for brushing)

Instructions

    Rinse the lamb chops and pat them dry. Peel and roughly chop the garlic. Mix the garlic with lemon juice, rosemary, 3-4 tablespoons of olive oil, and pepper; coat the chops and let rest covered for about 30 minutes.

    In a dry pan, toast the pine nuts until golden brown and fragrant. Remove and cool. Rinse the parsley, remove leaves, and pat dry. In a blender combine parsley, toasted pine nuts, garlic cloves, and 2-3 tablespoons of olive oil; blend and gradually add more olive oil until a thick pesto forms. Stir in pecorino and season with salt, pepper, and lemon juice.

    Wash the tomatoes and skewer them on soaked wooden sticks.

    Remove the lamb chops from the marination, season lightly with salt, and grill over high heat for 3-4 minutes per side until browned. Brush the tomato skewers with olive oil and grill alongside for a few minutes.
