Lamb Chops with Green Beans

Ingredients
- 8 lamb chops
- 2 Garlic cloves
- 1 sprig rosemary
- 6 tbsp Olive oil
- 100 ml lamb stock
- 1 tsp balsamic vinegar

Rinse the lamb and pat dry. Optionally clean the bones. Place the chops in a shallow dish. Peel the garlic and slice thinly. Rinse the rosemary, shake dry, pluck leaves, and chop. Mix with garlic and 4-5 tbsp oil and spread over the lamb. Turn the chops in the oil so the meat is evenly coated. Cover and refrigerate for about 2 hours to marinate.

Wash, trim, and blanch the beans in salted water for about 10 minutes. Drain and toss them in the remaining hot oil in a pot. Season with salt.

Brown the lamb in a hot non-stick pan on both sides and let it cook gently over low heat for about 5 minutes.

Arrange the chops with the beans on plates. Deglaze the pan with stock, season with salt, pepper, and balsamic vinegar, drizzle over the chops, and serve.
