Ingredients
- 4 slices of kassler (≈160 g)
- olive oil
- 1 Garlic clove
- 4 Spring Onions
- 8 ripe apricots
- 1 untreated lime
- Salt
- Pepper (freshly ground)
- a pinch of sugar

Preheat the grill. Wash the meat, pat dry, season with pepper, brush lightly with oil and place on the hot grill. Grill each side for about 4 minutes.

For the salsa, peel and finely chop the garlic. Rinse the spring onions, trim them and slice into thin rings. Boil the apricots, cool, peel, halve, pit and dice small. Wash the lime under hot water, dry and zest it. Squeeze the juice. Add to the apricots, briefly simmer, then deglaze with the lime juice. Mix in the zest and season with salt, pepper and sugar. Arrange on top of the kassler slices and serve.
