Ingredients

  • 500 g ground beef
  • 2 red onions
  • 0.5 eggplant
  • Salt
  • 2 tsp Olive oil
  • 50 g arugula
  • Pepper (freshly ground)
  • 4 hamburger buns
  • 4 tbsp salad cream
  • 4 slices pecorino cheese
  • 12 dried tomatoes
  • 4 tbsp pesto

Instructions

    Knead the ground beef well and divide into 4 portions. Shape each portion into a flat patty by hand or with a burger press, stack them on a plate, and refrigerate until grilling. Separate individual patties with parchment paper to prevent sticking.

    Preheat the grill. Peel and slice the red onions into rings. Wash the eggplant, slice it thinly, salt it, and let it sit in a sieve for about 20 minutes. Pat dry with kitchen paper and brush with olive oil. Shake off excess moisture from the arugula.

    Grill the patties on both sides for about 5–6 minutes. Season with salt and pepper after flipping. Grill the eggplant slices for 3–4 minutes until lightly browned on each side. Halve the buns and toast them on the grill.

    Spread salad cream on the cut side of the bottom bun halves and cover with arugula. Place cheese on top of the patties, then stack the patties onto the salad. Layer eggplant slices, dried tomatoes, and onion rings over the meat. Spread pesto on the top bun halves and place them on top.
