Ingredients
- 2 egg yolks
- 2 tbsp Orange juice
- Salt
- Pepper
- 0.25 l vegetable oil
- 3 tbsp ketchup
- 2 tbsp cognac
- 1 tomato
- 0.125 l heavy cream
Instructions

Whisk the egg yolks with the orange juice, salt and pepper in a bowl. Slowly drizzle in the oil while continuously whisking. Then fold in the ketchup and cognac.

Wash, blanch, peel, seed the tomato and puree its flesh. Whip the cream until stiff peaks form and fold it into the tomato purée.
