Ingredients

  • 300 g broccoli
  • 2 Zucchini
  • 300 g green asparagus
  • 300 g Sugar snap peas
  • 1 bunch spring onions
  • 6 shallots
  • 1 tbsp green pickled peppercorns
  • 2 bunch arugula
  • Salt
  • Pepper
  • 2 Garlic cloves
  • 8 tbsp olive oil

Instructions

    Clean, wash broccoli and cut into florets, trim thick stems. Wash sugar snap peas and pinch off ends. Clean, wash spring onions, trim ends, cut into large pieces. Clean asparagus and trim ends. Peel shallots and halve them.

    Wash zucchini, trim ends, slice into thick rounds. Blanch broccoli, sugar snap peas, and asparagus in boiling salted water for 3 minutes, then shock in ice water and drain well. Cut four large pieces of sturdy aluminum foil, mix vegetables, divide into four portions.

    Wash arugula, sprinkle over the vegetables with peppercorns. Mix olive oil with salt, pepper, and crushed garlic; drizzle over the vegetables. Seal the packets tightly, place on a hot grill, and braise for 10 minutes, serving in the foil.
