Paprika and Cucumber Vegetable Medley

Ingredients

  • 1 salad cucumber (≈30 cm)
  • 1 red bell pepper
  • 1 green bell pepper
  • 1 yellow bell pepper
  • 2 onions
  • 2 tbsp butter
  • Salt
  • Pepper (freshly ground)
  • 2 tsp sweet paprika powder
  • 100 ml Vegetable broth
  • 1 tbsp White Wine Vinegar
  • 2 tbsp chopped dill sprigs

Instructions

    Peel the cucumber, cut it lengthwise in half, deseed and slice into 1–2 cm thick pieces. Wash, trim, halve, deseed, remove all white membranes from the bell peppers and dice them into 1–2 cm cubes. Peel the onions, halve and slice into strips. Melt butter in a pot and sauté the onion strips.

    Add cucumber and bell pepper to the pot, season with salt, pepper and paprika powder. Stir in broth and vinegar, cover and simmer over low heat for about 10 minutes. Taste and adjust seasoning; serve garnished with dill sprigs. Offer sour cream on the side.
