Grilled Giant Portobello Mushrooms with Olive Oil, Garlic and Herbs

A perfect after-work recipe – quick to make, healthy and made with fresh ingredients.

Ingredients

  • 12 Portobello gourmet mushrooms
  • 2 untreated oranges
  • 3 Garlic cloves
  • 1 bunch parsley
  • 4 tbsp olive oil
  • 1 tbsp dill (chopped)
  • Salt

Instructions

    Clean the mushrooms thoroughly.

    Zest the oranges and squeeze out the juice.

  3. 3.

    Remove parsley leaves, set aside some for garnish and chop the rest.

  4. 4.

    Peel the garlic and slice into rounds.

  5. 5.

    Coat a heat‑proof dish with 1 tbsp oil, place the mushrooms, add garlic, parsley, dill, orange zest and juice, drizzle with remaining oil. Season with salt and grill preheated for about 10 minutes. Garnish with remaining parsley, taste and serve.
