Grilled Eel

Ingredients

  • 600 g fresh eel (deveined and filleted)
  • Salt
  • black pepper (freshly ground)
  • 20 fresh sage leaves
  • 1 tbsp sharp mustard
  • 4 tbsp Lemon juice
  • 2 tbsp oil
  • 8 wooden skewers

Instructions

    Cut the eel into about 3 cm long pieces, season with salt and pepper. Wash and pat dry the sage leaves.

    Preheat the oven grill. Alternate threading eel pieces and sage leaves onto the skewers. Whisk together mustard, lemon juice, and oil; brush the skewers with this mixture. Grill under the broiler (on a greased rack with a drip pan underneath), turning every 2–3 minutes for about 8–10 minutes.
