Ingredients
- 1 chicken (pre‑cooked)
- 5 garlic cloves
- 4 lemongrass stalks
- 3 coriander roots
- 1 tbsp fish sauce
- 2 tbsp Light soy sauce
- 1 tsp salt
- pepper (ground)
- sweet‑spicy chili sauce (sweet‑sour ready sauce) for serving
Instructions

Peel and finely chop the garlic. Wash, trim, and finely chop the lemongrass white part. Wash, trim, and finely chop the coriander root. Mix garlic, lemongrass, coriander root, fish sauce, soy sauce, salt, and a pinch of pepper.

Wash the chicken, pat dry, and coat with the marinade. Wrap in fresh cling film and refrigerate for at least 1 hour.

Preheat oven to 180°C, place the chicken on a grill rack, slide a fat pan underneath, and roast for about 50‑60 minutes until crisp. Brush occasionally with the marinade.

Slice the chicken and serve with Nam Jim Gai sauce and rice as desired.
