Grilled Chicken Skewers with Spicy Marinade

Ingredients
- 600 g chicken breast fillet (prepped, skinless)
- 2 Organic lemons
- 6 tbsp Olive oil
- Salt
- freshly ground pepper
- 4 sprigs thyme

Wash the meat, pat dry and cut into bite‑size pieces. Rinse the lemons hot, pat dry, peel a strip from one lemon and squeeze its juice. Mix juice and zest with the oil, salt and pepper, add 3 thyme sprigs and marinate the chicken cubes for about 20 minutes.

Thread the meat onto skewers and grill over high heat for about 10 minutes, turning occasionally. While grilling, cut the second lemon into wedges. Serve the grilled chicken skewers garnished with lemon wedges and remaining thyme.
