Grilled Chicken Skewers with Salad

Ingredients

  • 600 g Chicken breast fillet
  • 4 tbsp sesame oil
  • 1 tsp Sweet paprika powder
  • 1 tsp harissa
  • 2 tbsp lemon juice
  • 1 pinch cayenne pepper
  • 2 baby romaine lettuces
  • 1 handful parsley
  • 1 handful mint basil (or mint and basil)
  • 2 Tomatoes
  • 150 g radishes
  • 50 g bell peppers (canned)
  • 2 tbsp olive oil
  • 1 tbsp raspberry vinegar
  • 2 tbsp Apple cider vinegar
  • Salt
  • Pepper

Instructions

    Wash, pat dry, and cut the chicken breast fillets into ~3 cm cubes. Whisk sesame oil with paprika powder, harissa, lemon juice, and cayenne pepper; combine with the meat and marinate for about 15 minutes.

    Wash romaine lettuce, tear into pieces, and spin dry. Wash parsley and mint basil, shake dry, and pluck leaves. Wash tomatoes, remove stems, slice into wedges. Wash radishes, trim, and slice thinly. Drain bell peppers. Mix all in a bowl. Whisk olive oil with raspberry and apple cider vinegar; season with salt and pepper. Toss the salad with the dressing.

    Preheat the grill and thread the marinated chicken onto skewers. Grill for about 10 minutes on each side, seasoning as you go, then serve with the prepared salad.
