Green Tomato Salsa

A South American side dish featuring a tomato salsa that pairs well with grilled fish or meat.
Ingredients
- 2 green peppercorns
- 750 g half-ripe tomatoes (or firm green tomatoes)
- 2 onions
- 1 bunch cilantro
- 1 Lime
- 2 tbsp olive oil
- Salt
- Pepper
Instructions

Roast the peppercorns in a grill pan or on a hot grill until browned all around.

Rinse the skins off under cold water.

Slice the peppercorns lengthwise, remove seeds, wash and finely chop them.

Wash the tomatoes, quarter them, cutting off the stem ends. Remove seeds and dice the flesh.

Peel and finely chop the onions.

Wash the cilantro, shake dry and finely chop the leaves.

Combine cilantro with peppercorns, onions, and tomatoes in a bowl. Squeeze the lime. Stir 2-3 tbsp of lime juice and olive oil into the tomato mixture, season with salt and pepper, and let it sit for an hour.
