Green Grain Patties

The Green Grain Patties from Spoonsparrow are a vegetarian delight for the whole family.

Ingredients

  • 1 onion
  • 125 g carrots
  • 1 tbsp butter
  • 3 tbsp coarsely chopped hazelnuts
  • 180 g green grain groats
  • 500 ml vegetable broth
  • 250 g Mushrooms
  • 2 sprigs marjoram (each)
  • 2 sprigs thyme (each)','3 tbsp germ oil','100 g whipping cream','1 tsp rosemary powder','2 tbsp breadcrumbs

Instructions

    Peel and finely dice the onion. Wash, dry, peel and grate the carrots finely. Warm butter in a pan over medium heat. Sauté onions for 5–7 minutes until translucent. Add carrot shreds and nuts and fry for about 3 minutes.

    Add green grain groats, pour in 500 ml broth, stir and bring to a boil. Reduce heat and continue stirring until a firm porridge forms (about 10 minutes). Set aside the mixture and let it soak for 30 minutes.

    For the herb sauce clean and slice mushrooms. Wash marjoram and thyme, shake dry and pluck the leaves.

    Heat 1 tbsp oil in a pan and sauté mushrooms over high heat while stirring for about 6–8 minutes. Add cream, marjoram, thyme and rosemary; simmer on high heat for 4–6 minutes until reduced.

    With damp hands form four patties from the soaked green grain mixture, coat them in breadcrumbs. Heat remaining oil in a non‑stick pan and fry patties over medium heat until golden brown on both sides. Plate the green grain patties with herb sauce.
