Green Christmas Cake

Ingredients
- 75 g soft margarine
- 35 g sugar
- 1 packet vanilla sugar
- 1 pinch salt
- 1 egg (size M)
- 75 g flour
- 2 tsp cocoa powder
- 1 tsp Baking powder
- 1 sachet gelatin dessert (“Waldmeister flavor”)
- 200 ml apple juice and water each
- 70 g sugar
- 250 g quark (20% fat in cream)
- 1 packet vanilla sugar and lemon zest each
- 200 g whipping cream
- 1 packet stabilizer

Cream the margarine. Gradually stir in sugar, vanilla sugar, salt, and egg. Mix flour with cocoa powder and baking powder, sift over the mixture, and fold quickly. Pour the batter into a 22 cm diameter springform lined with parchment paper and smooth the top. Bake in a preheated oven at 180°C (gas: level 2-3, convection: 160°C) for 15–20 minutes. Remove the base from the pan and let it cool on a wire rack.

For garnish, cut chocolate couverture into pieces, place them in a bowl, and melt over a hot water bath. Let cool slightly. Then transfer to a small freezer bag and cut off a tiny corner. Sprinkle chocolate stars onto appropriately sized parchment paper and allow them to set.

Prepare gelatin dessert with apple juice, water, and sugar according to the package instructions. Mix quark with vanilla sugar, lemon zest, and 150 ml of the still liquid gelatin dessert. Whip cream until stiff peaks form, letting in the stabilizer, then fold into the quark mixture.

Place the cake base on a plate and encircle it with a ring mold. Spread the quark filling over it and refrigerate for 1½ hours.

Top the cake with some chocolate stars. Gently warm the remaining gelatin dessert over low heat until liquid again, but do not let it become hot. Carefully pour over the quark cream. Refrigerate for another hour. Remove the ring mold carefully and decorate the cake with the remaining stars.
