Green Chicken Curry on Skewers

Ingredients
- 2 tbsp green curry paste
- 1 tbsp fish sauce
- 4 fresh curry leaves
- 250 ml unsweetened coconut cream
- 1 tbsp cumin
- 2 young chickens (≈800 g each)
- lime wedge for garnish
Instructions

Whisk the curry paste with fish sauce, curry leaves, coconut cream and cumin. Rinse the chicken, pat dry and cut lengthwise in half. Rub with the mixture and cover to marinate in the refrigerator for about 2 hours.

Remove from the marinade and skewer each piece on a skewer. Grill over medium heat, turning regularly, for about 25 minutes.

Serve garnished with lime wedges.
