Vegetable Curry

Ingredients

  • 1.5 kg mixed vegetables (e.g., yam root, sweet potatoes, corn cobs, potatoes all cleaned, washed)
  • 100 g fine coconut shavings (fresh or ready-made product)
  • 2 dried chili peppers (crushed in a mortar)
  • 1 tsp tamarind
  • 7 curry leaves
  • 0.5 tsp mustard seeds
  • 2 tbsp oil
  • Salt

Instructions

    Cook yam with 500 ml water for 10 minutes, then add sweet potatoes, corn, beans and pumpkin, season with salt and cook for another ~10 minutes until vegetables are firm yet tender.

    Meanwhile process coconut shavings, chili and tamarind with a little water into a soft paste.

    Add this paste to the vegetables, bring to a boil and simmer for 5 minutes.

    Heat oil, toast mustard seeds until they crackle, then add curry leaves and pour over the vegetable curry. Serve hot.
