Green Bean Stew with Crème Fraîche

Ingredients
- 600 g green beans
- 1 bunch bean herb
- Salt
- Pepper
- 6 tomatoes
- 2 onions
- 1 Garlic clove
- 1 EL tomato paste
- 2 EL oil
- 100 ml Vegetable broth
- 50 g walnuts (roughly chopped)
- 1 EL finely chopped herbs (Provence)
- 150 g crème fraîche

Clean the beans and cook them with 2/3 of the bean herb in plenty of salted water until al dente.

Wash the tomatoes, blanch them, peel, and cut into bite-sized pieces. Peel and roughly chop the onions. Peel and press the garlic. Heat the oil in a pot and sauté the onions with the garlic, stir in the tomato paste, add the tomatoes, cover with broth, and let simmer gently for about 10 minutes. Meanwhile mix the herbs with the crème fraîche and season with salt and pepper. Taste the tomato-onion mixture and adjust seasoning if needed. Drain the beans, remove the bean herb. Divide the stew into small bowls, arrange the beans diagonally on top, garnish with bean herb and crème fraîche, and serve immediately.
