Green Bean Shrimp Salad

Ingredients
- 1 bundle spring onions
- 500 g green beans
- Salt
- 2 red bell peppers
- 400 g cooked shrimp meat
- 80 g salted peanuts
- 1 tbsp Lemon Juice
- 2 tbsp Orange juice
- 1 tsp soy sauce
- 0.5 tsp liquid honey
- 1 tbsp Peanut butter
- 50 ml Vegetable broth
- Salt
- 1 tsp freshly chopped bean herb
- coriander greens (for garnish)

Rinse the spring onions, trim and slice into thin rings. Wash the beans, snap off ends and blanch in boiling salted water for about 5 minutes, drain, shock in cold water, and let dry.

Wash the peppers, quarter them, remove seeds and white membranes, then cut the flesh into narrow strips.

Cut the shrimp meat into small pieces. Toast the peanuts in a pan without added fat until golden yellow, remove, cool, and roughly chop.

For the dressing whisk together lemon juice, orange juice, soy sauce, honey, peanut butter, and broth; season with salt. Stir in the bean herb.

Halve the beans, combine with spring onions, pepper strips, and shrimp; arrange on plates and drizzle with dressing. Sprinkle with peanuts and garnish with coriander greens before serving.
